Late Night Pastries. Followed Closely by Early Morning Pastries.

There…on my list…were cream filled, chocolate coated pastries in which I had almost zero experience. Make profiteroles from scratch.

So to the household of all Edmonds Cookbook culinary delights I went, and at approximately 20:45 the process began…

Weigh the butter.

Stir it with some dry ingredients as fast as possible.

It should come away from the side of the pot.

Stand and watch it cool down for five minutes.

Add eggs.

Stir until combined and glossy.

Put mixture into a piping bag.

Start piping.

Place the array of designs in the oven

Bake for 45 minutes or so until golden, crisp and dry (mmm… just how I like my chicken)

Play Monopoly while you wait and have everyone get sent to jail at the same time.

Whip cream.
Make chocolate icing (dark chocolate, butter and cream).
Fill and ice cooled pastries.

Eat the whole batch between 22:30-00:00 with a cup of tea while finishing Monopoly.

Then go home, sleep for a few hours and go eat more pastries at Little & Friday.

I can’t force you to do this. 
I’m just saying, it’s a good idea.
